I attended the Venison Butchery Course and from the initial contact with this company I cannot rate it highly enough . Friendly, professional and informative. The class itself was ran by a Master Butcher who was extremely knowledgeable and an excellent craftsman, the class size was small and was so welcoming and friendly , I can honestly say I came away with a great experience and many new skills and knowledge.

Attended the 1 day butchery course, this was lead by Marc a very knowledgeable butcher.
I was part of a group of 8 who were shown the skills to enable us to butcher and prepare a deer carcas. Hands on course, with the opportunity to ask as many questions as required.
Great venue, organised by very friendly members of Liddlesdale Venison.

Was my first proper time out deerstalking. Both men made it a brilliant first outing from the first message they were very welcoming. Throughout the session were very informative taking the time to explain what was happening and why. The pricing is good brilliant value for money!. Definitely recommend will be booking back in again! Most genuine people ive been out with.

Venison Butchery Course:
As one of the students who participated, I can recommend this course without hesitation.
Format is structured, yet relaxed.
Great carcasses and detailed hands-on instruction on how to first break them down to primal cuts, sub primal and then down to joints and fillets etc.
Content also included carcass inspection and care, correct knife handling, maximising meat harvest and/or importantly what not to retain.
Teas, Coffees and light lunch provided.
All in all, great value, authoritative and we even got to keep what we butchered.
