Venison Butchery Course: As one of the students who participated, I can recommend this course without hesitation. Format is structured, yet relaxed. Great carcasses and detailed hands-on instruction on how to first break them down to primal cuts, sub primal and then down to joints and fillets etc. Content also included carcass inspection and care, correct knife handling, maximising meat harvest and/or importantly what not to retain. Teas, Coffees and light lunch provided. All in all, great value, authoritative and we even got to keep what we butchered.
